So this was really fun! We learnt how to smoke moose! Which… like you’d imagine for smoking something, it’s really important your fire doesn’t cook the moose but only smoke it; although, that’s not necessarily something you would twig before being told that. So we built a tent and got set to making it nice and smoky inside, making sure to generate the smoke consistently for a number of hours from the open fire built on the ground inside the tent. This meant much to my delight, that we had to pop our heads inside the tent every now and again to check the fire hadn’t gone out and adding some more sticks and logs as needed.

Please note this was also the reason (or at least one of the reasons) for the structure of the cooking tripod being made up of six branches rather than three – to support the smoking tent canvas. And yes before you ask, the moose we smoked was very delicious.
