Today was a big day for Christmas shopping and Christmas dinner ingredient buying and preparation. When I finally returned home from the shops I made this chicken pepper and pasta dish. Our children like to grate cheese on top.


And although I don’t normally buy pre-prepared vegetables, there is one circumstance when I do. When they are discounted! So I grabbed a few packets of broccoli, cauliflower and carrots and steamed them to serve with the pasta. 

Ingredients

Olive oil

Spring Onions

Red Pepper

Roast Chicken pieces.

Pasta (Penne or Fusilli is good)

Jamie Oliver’s Lemon, Thyme & Bay Salt – a good lot of generous grinds.

Frozen Peas cooked.

Double Cream.

Black Pepper.

Grated Mature Cheddar Cheese to Serve.

 

My lot had eaten most of the completed pasta dish by the time I got to photograph what was left in the pan, just so you don’t think I cook tiny meals for my family!!
