I have to make confession. This is one of my most favourite drinks in the whole world. In fact I love it so much, I would have it instead of dessert almost any day. Don’t worry, I’m not going to make you have it for dessert, but despite it’s rather sanguine appearance, I would love to persuade you to try it.
There are a couple of things I love about this drink. Firstly, it has beetroots in it and I love beetroots. I’m not talking about the dreadful stuff in vinegar that you buy from the supermarket, I’m talking about the fresh kind with a raw earthy, almost soily taste, not unlike the earthy notes of ginseng and dandelion. Secondly, because it is so vitality boosting due to the many vitamins and minerals in it and lastly, because of it’s simplicity.
This recipe makes a sweeter drink. If like me, you would prefer a more savoury juice, add another carrot and another beetroot to the ingredients. You will need a juicing machine for this.
The Ingredients
- 3 small to medium beetroots
- 3 apples - whatever is seasonal
- 2 large carrots (I've used wibbly wobbly carrots from my garden in case you were wondering why the carrots in my picture look like they do)
If your beetroots, apples and carrots are organic, leave the skin on, otherwise peel them.
Slice the stalks and tails off your beetroot and slice into chunks that can easily fit down the funnel of your juicer.
Stalk and core your apples and slice into segments
Top and tail your carrots and slice into thick slices
Juice in your juicer and watch your ruby red elixir trickle out into your waiting jug.
Drink preferably immediately and congratulate yourself on how wonderfully healthy you are being.
